Restaurant Manager in South Downs, West Sussex

Nominee Darryl Harris, Food and Beverage Manager, The Pig at Bridge Place, Canterbury, Kent

The Pig Hotel is known for its high-quality and intuitive service, so the appointment of Lydia Rigby as the restaurant manager of the latest Little Pig fully demonstrated her talent.

Rigby joined Home Grown Hotels as a part-time waitress and stayed to gain experience as a bartender, supervisor, bar manager and receptionist. In 2020, she was appointed as an assistant restaurant manager to manage a team of 20 people in a busy restaurant with 90 restaurants.

Her talent lies in motivating her team through informative briefings and wine tastings (before Covid), and her energy inspires junior employees to emulate her style and improve their skills.

Since The Pig in the South Downs has a vineyard, her diligence enabled her to improve her wine knowledge by obtaining a WSET level 3 diploma by self-financing during her work. She has been diligent and used the blockade as an opportunity to rewrite the catering training manual. Before the reopening in April, she can find her leading role-playing training courses, menu knowledge quizzes and pallet handling competitions to prepare and attract employees. She also somehow took time out to help the reception team complete their huge rebooking task.

Her dedication to this industry is tangible. Rigby is one of the co-founders of Seat at the Table, a digital campaign that calls for the appointment of a hospitality minister in the government.

What are the most positive changes in personnel since industry restrictions have you seen?

"Now this industry has gained more recognition. The hotel industry is a vibrant and rewarding career path for young people; I hope that the change in public perceptions and the support of government agencies will ensure that we can inspire and cultivate in this industry Talents that flow in China."
